This episode starts where ep.6 left off, with the surprise move of Matt
to the Red Team. Matt states that he is not afraid of anyone and that
Ben hides behind Bobby. Matt's new Red teammates are totally wary and
basically not willing to accept him. However, Gordon Ramsay has just
the ticket, an exercise to discover whose palates were more sensitive
(although the real answer to this is none meet his standard). He cooked
3 dishes "while the others were sleeping"…

Hell's Kitchen by nature of who the cheftestants are is always filled with cliches and aphorisms. This episode may have set a new record for them. The baloney is flying all over the 2 kitchens and in the sleeping quarters. Matt, who continues to be ignored and marginalized as a result of his incompetence, starts it off by stating the Bobby is sloppy and the Blue Team is dysfunctional. Both of those may be right but that does not excuse Matt's low performance.

Gordon Ramsay started off with a demonstration of a $200 pizza he had created using expensive white truffles. He was making the point that pizza can be extremely gourmet, but that is a function of exotic ingredients. If you have $150 of exotic or expensive ingredients, why don't you just create something more interesting than pizza with them? However, Ramsay has a mission as we shall see so pizza it is.
