Hell's Kitchen Season 10: Exclusive Interview With Royce Wagner

The Blue Team struggled through dinner service last night on Hell's Kitchen and needed the help of the Red Team to finish. In the loss, Royce Wagner seemed lost and out of his element at the meat station and in the end, Chef Ramsay sent him home. Today, we got an exclusive interview with Royce as he talked about his experiences in Hell's Kitchen, where you can find him cooking now and much more.

 

Q. Todd, RealityWanted: What made you decide to try out for Hell's Kitchen?
A. Royce: At the time I was working with Chef Ralph Pagano and he inspired me, for a lot of reasons, to join Hell's Kitchen for publicity and seeing how that side of the pressure is and getting to be on TV.

 

Q. Todd, RealityWanted: You struggled with timing last night and kept telling Chef Ramsay different times for the meat. What was causing the issue?
A. Royce: It's a matter of the pressure that's put on you when you get to Hell's Kitchen and going through the weeks there. You try your best.

 

Q. Todd, RealityWanted: Do you think it was your struggles at the meat station that did you in, since the winner will be working at Chef Ramsay's new steakhouse?
A. Royce: I think it's just a matter of his choice and his discretion on what he thinks and how hard you are pushing yourself. I think it is over a course of time and eventually he knows who he wants to win. He is the show, so at that you point you are just cooking your best.

 

Q. Todd, RealityWanted: Do you think anyone should have gone home before you or was it your time?
A. Royce: Of course you want to stay longer, but I don't think negatively towards it. You roll the dice and I made a great opportunity and I took advantage of it. I was able to be on TV and I have a great job with The One Group.

 

Q. Todd, RealityWanted: What was it like working in Hell's Kitchen and under Chef Ramsay and all the chaos/drama and what not?
A. Royce: That was actually the most I got out of it. It was really exciting to be there with him and be able to see someone thrive at that kind of level for so many tables and do individual tables at a time and making sure everything is perfect and spot-on is definitely an awesome experience to work at that level.

 

Q. Todd, RealityWanted: What's the biggest thing you are going to be taking away from this whole experience?
A. Royce: Perfection. How much it is to a guest and how much they appreciate it is really what you see in my eyes in going to Hell's Kitchen. When you actually serve perfection and you see the faces, it's a lot different than someone getting something that was sub-standard.

 

Q. Todd, RealityWanted: Now that you're off the show, are you rooting for anyone to win this season?
A. Royce: I'm rooting for all the contestants. I think Justin has a great shot at it. He was definitely a good cook. Everybody there is as talented as they said they were and is trying their hardest, so I give it up to all of them. It is hell there. It ain't easy.

 

Q. Todd, RealityWanted: Where are you cooking now and what can readers expect next from you?
A. Royce: I'm cooking at STK Midtown in New York. The sky's the limit and I'm hoping to do a lot of things in my future. It was a good opportunity. I was working in Miami for The One Group and I was brought on to help launch the new STK in New York in Midtown. A lot of good things have already happened.

 

Q. Todd, RealityWanted: Is there anything you would like to add?
A. Royce: I definitely think because of the show, I am here in New York. I think it changed me in a lot of ways. It made me focus a lot more and I've appreciated the help I've gotten through the years from The One Group and I'm happy to be in New York.
