Top Chef: Seattle - Episode 11 Recap

Emeril, Padma, Tom, Gail of Top Chef Seattle

After the chefs presented their concepts and signature dish for Restaurant Wars on Top Chef, the two winners are Kristen's Alterlier Kwan and Sheldon's Urbano restaurants. The teams have been chosen and it's guys vs. girls, which should be very interesting! As if working in teams isn't stressful enough, the kitchens are located outside of the restaurant.

 

Let's just say that nobody has a Dream Team. (How can they with people like John, CJ, and Kuniko all sitting around Last Chance Kitchen?) Josie continues to move at her own pace, and doesn't finish her prep at the end of the first day. Kristen wants to plate as people come in to the restaurant, but it doesn't seem like the best plan with 100 people about to come in the door. Meanwhile Stefan, who has taken front of house duties, realizes minutes before opening that he can't pronounce anything on the menu. Wuh oh!

 

The judges head to Alterlier Kwan first and try Lizzie's charcuterie, which Emeril in particular seems to love. Josie falls behind with her bouillabaisse and Kristen is quite unhappy with the consistency as it's being plated. Meanwhile, the judges are waiting... and waiting. When it finally arrives, the judges like the crab but the halibut is overcooked and there's dried sauce on the plate. Gross. Kristen's beef bourguignon is a good dish in Tom's eyes, but feels like it hasn't been reinvented enough. Brooke is up next with a cheese course, which gets mixed reviews. Finally, Kristen's deconstructed macaroon does not please Gail, who feels it's not even close to what a macaroon should be.

 

Next up is Urbano, where Stefan is completely unconcerned with any of the other diners, except for the judges. His dish is up first, yellowtail with white soy sauces, which Emeril called delicious. Josh's take on balut (which seems like the least appetizing thing ever) doesn't come across as Filipino and isn't explained well by Stefan. Seems like a miss. Sheldon's prawns aren't even introduced at all, and Stefan throws them an attitude when they ask about it. Sheldon also serves pork belly, and Tom calls it the best tasting dish he had all night. Josh finishes things off with sorbet and mousse, along with Stefan's ginger tea, and the judges feel much happier with the food than the service they received.

 

At Judges' Table, the minute Josie's bouillabaisse comes under fire, she throws Kristen under the bus.  Stefan also comes under fire for his poor serving skills but he responds by saying, "I'm a chef, not a server."  Bad attitudes aren't enough to send Josie or Stefan home though.  In a shocking decision, the panel sends Kristen packing to Last Chance Kitchen.  At least when she got there, she defeated CJ and has a decent shot at redemption.  I'm still shaking my head that the guys won, and Kristen took the fall for her team's loss.

 

 

Top Chef: Seattle airs Wednesdays at 10/9c on Bravo.
